The aim of the Canteens Living Lab project is to explore ways to drive more sustainable canteen management and develop a roadmap towards a circular economy of canteens. In the context of that, a kick-off workshop with 10 public canteens was held.
The purpose of the workshop was for the participant canteens to better understand the FUSILLI project; get to know each other in regards to the sustainable practices already present in the project group; network and map out the opportunity areas for becoming more sustainable.
The kick-off of the Canteens Project was held at SDU (University of Southern Denmark), just above the canteen. SDU’s canteen is one of the participants therefore we took the opportunity to visit SDU’s kitchen to hear about their best practices regarding food waste, as they have found a way to measure their food waste and integrate it into their daily working routine. The plan is to visit a different canteen every time we meet to learn more from each other.
